Cookery is all about food, and kitchen science. A professional cook is called a chef, and his or her role involves further skills that relate to cooking in a commercial setting, including menu compilation, food costing, purchasing, work/time management, planning, communication and managing a kitchen brigade. The chef in a high-class hotel or restaurant offering fine dining must demonstrate outstanding skills in food preparation and its presentation, as well as be across fashions and trends in cuisine.

IT ALL BEGINS AT A REGIONAL COMPETITION

The WorldSkills Australia Cookery Competitions begin at a grass roots level in one of 34 Australian regions. The Cookery Regional Competitions test the skills and knowledge of 4000+ apprentices, trainees and students, who have the opportunity to win gold, silver and bronze medals and gain the chance to go on to compete at a national level.

WorldSkills Australia competitions operate on a two-year cycle. The next Cookery Regional Competition rounds are now running across the country. 2018 and 2020 are the next National Championship years.

Regional Competition

Training Package Requirements – Regional Level

The 2018 WorldSkills Australia Regional Competition for Cookery align to the Units of Competency (Elements of Competency and Performance Criteria) in the SIT30816 Certificate Iii in Commercial Cookery (Release 1).

  • BSBWOR203 – Work effectively with others
  • SITHCCC001 – Use food preparation equipment
  • SITHCCC005 – Prepare dishes using basic methods of cookery
  • BSBSUS201 – Participate in environmentally sustainable work practices
  • SITHCCC007 – Prepare stocks, sauces and soups
  • SITHCCC008 – Prepare vegetable, fruit, eggs and farinaceous dishes
  • SITHCCC012 – Prepare poultry dishes
  • SITHCCC019 – Produce cakes, pastries and breads
  • SITHKOP001 – Clean kitchen premises and equipment
  • SITHPAT006 – Produce desserts

National Competition

Training Package Requirements – National Level

The 2018 WorldSkills Australia National Competition for Cookery align to the Units of Competency (Elements of Competency and Performance Criteria) in the SIT30816 Certificate Iii in Commercial Cookery (Release 1) and SIT40516 Certificate IV in Commercial Cookery (Release 1) Qualifications.

There are no units required in addition to the Regional units.

National Tasks

  • Demonstrate basic cookery skills including a range of methods of cookery for a three-course menu and a mystery menu revealed at the competition
  • Display competence in handling tools in all situations
  • Show skills in all basic kitchen preparations
  • Demonstrate ability to innovate in presentation and explore new ideas
  • Show skills in pastries and desserts
  • Demonstrate knowledge of meat, fish and poultry, different fruits, vegetables and potato cuts
  • Show use of garnishes to give general appeal and stimulate appetite

15 hours – 3 days
