“I first decided I wanted to be a Chef in High School. I was working casually as a dishwasher and realised I loved the environment, especially the adrenaline of the kitchen. It was then I decided I wanted to pursue Cooking as a career.”
Apprentice Chef, Zak Resuggan, first discovered his passion for cooking through his passion for gardening. “I started to experiment with different ingredients and produce I’d grown.” Like his produce, his interest kept growing and he made the decision to leave school in Year 10 to start his Cookery apprenticeship.
Zak learned about WorldSkills through his TAFE teacher who registered him for the Regional competition. “It was during the event I discovered my enjoyment of the competitive environment. I realised how much I liked having control over my skills and performance.”
He progressed to the 2025 Nationals where he received a coveted Certificate of Excellence in Cookery. “My proudest moment so far was the final day of Nationals. As soon as the competition finished, everyone came together to congratulate one another, celebrating not just the achievement, but the dedication that made it possible.”
Zak’s inspiration comes from several avenues. Professionally, he admires Thomas Keller “because he focuses on using local produce and perfecting classic techniques,” but in life, it’s “people who are honest, hardworking and patient”, as he sees those qualities as paramount in building trusting and strong relationships.
One relationship that’s played a big part in his success is with his employer. “Matthew Carnell has generously shared both his knowledge of Cookery and his competitive experience. Through him, I’ve learned consistency and dedication are essential ingredients for success and personal growth, as well as how small actions compound into something much bigger.”
Zak is focused on a rather large goal once he’s finished his apprenticeship. “I plan to work in France to further develop my knowledge and skills. I also want to take the opportunity to travel and gain new experiences, ones that will help me grow further.”
He’s also keen to give back. “Through my work, I hope to inspire others to follow their passions, motivating them to step outside their comfort zones and embrace new challenges.”
